This is my kind of recipe. Not much measuring, just a paragraph lending itself to so many variations and unique modifications, have fun with it!
You can make a pot of beans (you instant pot people, have you tried this?) or you can use canned. Surely in a side by side taste, cooked at home beans will taste superior to canned, but you probably won't be tasting them together, so the canned will work fine.
Place a can of drained, rinsed barlotti or white beans in a food processor or high speed blender, with a few glugs of good olive oil, salt and pepper, a handful of basil, a clove of garlic and if you're feeling it throw in a teaspoon of fennel seed. Mix it up so that it's thick but not crumbly, if it seems dry add a few tablespoons of water.
Toast a thick piece of bread, as soon as it's toasted, rub it with a clove of garlic. Top with beans, extra salt and pepper and enjoy. This is great with a simple green salad.
