- 2 mangoes, diced (here’s a how-to for cutting one that I’ve found very useful)
- 1/4 cup chopped cilantro
- juice of 2 limes
- 1-2 Tbsp. finely diced red onion or shallot
- salt + pepper
- 1 diced jalapeno (optional)
Make the salsa ahead of time so a flavors can get all comfy and yummy.
The rest is really easy and should be minimal because the mango salsa is the star here.
- Light fish or shrimp, seasoned with salt, cumin and smoked paprika, grilled/sauteed with coconut oil
