- 1 garlic clove, minced
- 2 bunches basil
- 1 handful (1 cup) arugula
- 3/4 cup shelled raw pistachios (not salted or roasted)
- 1/2 cup extra virgin olive oil
- 1/2 tsp. salt
- juice of 1/2 a lemon
Mince garlic. Put the rest of the ingredients into a blender or food processor until it's mostly chopped up. Add the garlic, give it a quick mix. It will last up to 5 days in the refrigerator in a sealed container, but it rarely lasts that long for me. It's good on anything: avocado toast, eggs, pasta, meat or fish, on roasted veggies, pizza, with beans or by the spoonful.
