There is lots of room for substitutes here, I just want to give you total permission to call this an acceptable, tasty summer meal. Feel free to put in your back pocket when the temperatures ramp up and everyone wants to swim as long as possible.
- Naan (or pita or other flatbread-y thing you like)
- Asparagus (I did saute these very briefly)
- Snap peas
- Pumpkin seeds
- Spring greens
